The Ganzi Training Restaurant Returns Sept. 16, Offering Community a Taste of Hands-On Learning
PAUL SMITHS, N.Y. (09/15/2026) — The Ganzi Training Restaurant at Paul Smith's College will reopen for the fall semester on Wednesday, Sept. 16, inviting members of the community to enjoy a three-course meal while supporting students as they put their culinary and hospitality skills to work in a real restaurant setting.
Located in Cantwell Hall, The Ganzi is Paul Smith's College's student-run training restaurant, where students gain practical experience preparing and serving meals for guests. The restaurant is part of the College's culinary and hospitality programs, giving students the opportunity to apply what they learn in the classroom in an environment that mirrors the expectations of the professional food and hospitality industry.
For local diners, that means a meal with a purpose.
"We want people to come experience what our students are capable of," said Rob Dumas, director of the College's Institute of Adventure Hospitality & Food. "When you dine at The Ganzi, you're having more than a meal. You're giving our students an opportunity to practice their craft, build confidence, and experience the standards of a professional restaurant."
The Ganzi will serve a three-course tasting menu Wednesdays, Thursdays, and Fridays with seatings at 11:30 a.m., 12:00 p.m. and 12:30 p.m. each day. Meals are $19.10 per person. Reservations can be made through the College's upgraded online reservation system.
Community members are encouraged to make The Ganzi part of their fall dining plans and experience firsthand the work happening inside Paul Smith's College.
